Willowisp
Willowisp weakens physical foes and slowly drains their hit points as you sit there and laugh, draining their moves using pressure. It's equally suited toward fighting physically aligned ubers as well as special ubers because of its EV spread and willowisp. Shadow Ball and Dragon Pulse give you nice STAB when attacking, but Dragon Pulse is especially useful against those dragon ubers you'll be facing, and it can actually hit Blissey.. Sleep talk gives it awesome flexibility when asleep, as well.

This set is more offensively oriented than the aforementioned set, but calm mind gives it suitable offensive and SP defensive boosts, making it more of an immediate threat than before. Just like before, use rest and sleep talk to stay alive, boost when you can afford to, and then let loose with STAB dragon pulse.

A monster on the field. Unfortuanately, Giratina loses a lot of its defensive and sustainability advantages, but you can hope to make up for it by using raw power and some natural G-tina defenses. Maybe, just maybe, you can try to add safeguard to guard against annoying status effects, but that is probably not needed, because you have choice specs, unless you are switching to another poke? Heck, if you're going to switch anyways, use Draco Meteor or any other supereffective move. This set boosts huge power, but unfortunately, you are locked into your attack.

Draco Meteor/.... Safeguard?
A monster on the field. Unfortunately, Giratina loses a lot of its defensive and sustainability advantages, but you can hope to make up for it by using raw power. Safeguard is an option for those hoping to block status effects on their team. This set boosts large amounts of power, drawing mainly from type coverage, EV spread, and base stats. Plus, you can't tack on choice items like with Another Giratina.
Other Options
-Roar to forcibly switch out your opponent's pokemon in case they start to pose a real threat due to stat boosting, or if you already have spikes laid down, you can just juggle them in and out;
-Endure if you want to stall at the last second to waste your opponent's PP;
-Silver Wind just for the chance to heighten its stats (10% chance);
-Substitute(with its enormous tank of HP, it can be pretty bulky to stall pokemon out);
-Protect;
-Shadow Force if you want STAB and a move that can break through protect. Howver, your opponent has time to do whatever they want in that time.(Recommended if your foe is on the last poke and you added Attack EVs to Giratina)
EVs:
Try to maximize health and keep G-tina on the field as long as you can to fulfill its role using different EV's.
Threats:
Things with troublesome status effects that will stop you from getting work done. Speedy hit-hard Rayquazas(scarfed) or quick T-tars with s-effective attacks. In order to get them out of the way, get aura sphere or Outrage onto your Giratina, even though you'll sustain heavy damage. Oh, and don't stick only ghost moves on Giratina. That's just like inviting Blisseys to come and kill your Giratina, or at least inflict it with status effects.
How to Counter Giratina:
Giratina actually has many huge weaknesses in the uber field, leaving it wide open to (the very common) Supereffective attacks. For example, Rayquaza, as mentioned above, can pose a huge threat to Giratina with its dragon moves alone. Other ubers such as Mewtwo can move in quite quickly due to Giratina's 90 base stat in speed and bounce supereffectives off of giratina. Almost every uber has a supereffective move that exploits Giratina's Dragon, ghost, Ice, or dark weakness.
