So after watching this video I'm really starting to wonder should I use this for my plays. I main falcon so this would be really handy for throwing out up-airs to juggle opponents. How in this video...

Jtails gives a number of reasons why tap jump should be turned off.
So I'm looking on advice whether to use double sticking and having tap jump on OR playing without accidental mistakes due to tap jump. I'd love if anyone with experience in this could fill me in.

It's entirely preference. Play with both and see which one you prefer.

I don't have the opportunity to watch the videos at the moment, but if I recall correctly, ZeRo uses the default control settings with Tap Jump ON, since he simply has no problem executing tilts. If you do it enough, it'll be muscle memory and you won't have any problems. That said, it would obviously take quite some time to achieve that level of mastery. But when that happens, it opens windows for many other opportunities previously not possible.

I use Z for jump instead of tap jump or X/Y. This makes it very easy to do short hops with my index finger and just use my thumb on the C-stick to execute frame perfect aerials. I have tap jump off because I don't use it and I just find it annoying and unnecessary to have it on. It takes a little bit of getting used to jumping with Z, but for me it was really worth it.

Bengal's idea is only one way of acheiving this 'optimal' control scheme. If you set your shoulder buttons to attack, special, and sheild (on GCN), you'll never have to move your thumbs from the sticks, wasting no time. However, it still gets better. On the Pro Controller, you can also set jump to a shoulder button, so you can turn tap jump off and get the best of both worlds.

Also, setting your C-stick to attack is something that should be standard by now. I don't know why it hasn't caught on.

It probably hasn't caught on because it's only useful for certain characters and comes with at least one new mechanic that is incredibly hard to get used to (and avoid accidentally doing in pressure situations) which is diagonals registering as neutral inputs.

ZeRo uses tilt stick, but your post reminded me that if I can up tilt with C Stick then leaving tap jump on is likely strictly better, so ty.

I actually have Z as jump and Y as grab, and Z jump lets me do everything double sticking does because I can just slide right off the edge of the Z button to short hop and have my thumb on the C-stick the whole time.

Also, I play Mario so I keep c stick on Smash so I can throw out Mario's safest move, pivot usamsh ( ͡° ͜ʖ ͡°)

I'm finding it hard to use regular U-airs without burning my double jump should try getting used to the C stick for aerial from now on or just start trying stop burning the double jump?

Robin benefits from having C-stick set to smash because it means aerials will default to Levin Sword, which are superior to Bronze Sword aerials 90% of the time. Also, Robin's tilts are butt, so it's much more useful to have easy smash attacks when I'm on the ground than easy tilts. It allows for easy dthrow to usmash or running usmash, or dsmash to punish rolls.
