You should use the C-stick to do aerials it is much better then having to press A obviously you hav to press A for a Nair so if you don't want your finger to slip just practice doing floating aerials by yourself for a while.

For your second question do your first jump and hold Y and then press down on the joystick at the altitude you want to float it is really quite simple.

I thought that most peach players don't use the c-stick and think it's better to not have to press up on the control stick.

You don't have to press up on the control stick at all. I prefer C-stick but that one is purely preference I was just saying what I prefer to do. With your finger slipping I feel you just have to play more so that you get a feel of it.
