You rely too much on jumping to move around the stage and space aerials. Rising aerials are just as good if not better than later aerials, and they afford you more time to gain stage control or better positioning. Don't forget to use you dashes and wavedashes to close the distance if it will allow you to corner the enemy or to retreat if you want to avoid being in a certain position.

Also, if you want to avoid getting hit by Peach's fair after you whiff an aerial, you can simply full jump and fair/bair and drift away from Peach.
