Which courses are good for the IC when you are counter picking? and explain as well please

Well in counterpicking you might want some walls/dips when fighting a Pit or meta, so you can bounce around the ice blocks. Also, lots of edges so you can desync. You choose what stages are good for you. I personally like Shadow Moses Island, because it gives me some distance and protection for Nana, but if you are talking about tourney legal stages... then I don't know, I would need to see a list.

The problem about a list of stages is that there's constant arguing about what should be neutral and what stages are counter-pick.

I would actually choose final destination as i commonly use the grab+dthrow+fair and FD blocks people from recovering from under the stage quite often. 3 stock ftw.

Just try to avoid stages with too much movement or hazards.
