How simple a matter is it to restore the Brawl airdodges (doesn't send you into freefall, can use more than one, can't Wavedash with it, I believe)? My roommate/best mate and I wanted to switch back to those mechanics to see what P:M would be like.

Is it a matter of removing a few lines of code that alters the airdodges to Melee-style? Is there a step-by-step procedure for someone with an unhacked, NTSC Wii that runs P:M off of stage builder? [really simple set-up, basically.]

Long-ish story, but basically after a long conversation about SSB4 we determined that it's very likely to be 'Fast Brawl'. Wavedashing and L-Cancelling unlikely to make a comeback, retaining the multiple air-dodge system while having a generally faster pace and less horrible gravity that lets side-smashed opponents DI back to the stage over ten seconds :p We got curious enough to want to try such a metagame.

[Side-note: Any way to turn L-Cancelling off, simply and cleanly? Like, make the variable responsible always set to 0?]

There's no way to remove L-canceling besides putting in a non-P:M .gct completely. SSB4 is gonna be almost 100% Brawl, playing Brawl would help you lots more for it than a screwed up P:M would. I'm probly gonna play Brawl for a few weeks before it comes out and just use that to win the Gamestop tournies while never owning it.
