I think it would make those items a lot more interesting and fun(not to mention, in the case of assist trophies, more balanced)

Phosphora, Dark Samus, Magus, Mother Brain, Dillon, Stafy, Midna, Girahim, Starman, lakitu can all be attacked and killed early. This is just off the top of my head.I'm pretty sure several ATs do actually take damage can be prematurely removed.
Or maybe I'm just always drunk when I play items on.
It could be that.

Incidentally, it's mostly the harder-to-avoid Assists that can be damaged.
