what are the pros and cons for B sticking for this character? advantages and disadvanges?

b sticking

Advantages: Nothing. SideB is basically useless in competitive play, and Sheik receives no recoil from it. DownB is Transform and UpB is Vanish, which I'm completely certain would not be affected in any way by B-sticking.
Disadvantages: You don't have Smashes (and tilts with joystick directions inputted) on C-Stick, its much harder to pull off the sliding USmash, and there's no reason to B-stick.
