With an original model, original moves, etc? I remember seeing a Scott Pilgrim character, how was that modded into the game?

Are there any tutorials or speedpaint-style videos for making your own SSBB character from scratch?

That's impossible to exist. Making a psa goes from changing a few effects in attacks to 3d modelling. It can take long depending on what you want to do or not.
If you want to make a decent psa, one that look like it was made by the game's creators, new animations, attacks, csps, alts, fs etc... if you work on it, let's say, 3 hours a day, it can easily take you 6 months or more to finish it. That assuming you know what you are doing.
