I'll typing this down as I watch:

Vid 1:

1) Don't attempt to double shine unless you're able to stay on the ground during both shines. If you mess up, you're pretty much losing a combo opportunity.
2) You're Dair's are a bit too early. The opponent can still shield grab you if you do early Dair's.
3) I actually noticed your Falco was similar to mine when I started out, just doing SHL and Dairs repeatedly. Is that a bad thing? Well, if it works, then abuse it. Just keep in mind that this strategy might not work against other people.

Vid 2:

1) Again, you don't really need to JC shine since you're not really doing anything with him with the 2nd shine, just stick with one shine for now. You can worry about doing more JC shines later on.
2) To edge guard Doc's Up-B, just do a Dsmash (you probably already know this), but I did see you jump for no apparent reason and you let him recover. Bad! (Even though you Dsmashed him again, but that's not the point. When playing against other people, NEVER miss an edge guard opportunity. A missed edge guard is a missed kill)
3) Use the pillar! (Shine > Dair > Shine etc. against the opponent's shield). I keep seeing you full jump after you Dair > Shine and you never pillar. It's useful! Use it!
4) ...Dsmash his recovery! If you get hit by his recovery, that means you are too close to the edge. If you space yourself correctly, you'll be able to hit Doc with your Dsmash and his Up-B won't touch you

Hope that helps.
