They usually approach with the boomerang and either come in for a grab or follow up with an arrow or two.
Most of the time you are pretty aggressive when we fight and sonic doesn't do so well against projectiles.
All you have to do is slow down since your forward momentum is gonna get screwed up from the projectile game.

Other times on the ground they make use of their up special since they can move towards you while doing it and it hits multiple times. If they can they'll grab and then follow up with another one.

Since Luigi is all about wavedashing a lot this is another one of those things you want to wait and respond to. Typically when they approach with a wavedash the good ones end up behind you.
If they catch you with an up smash they'll most likely either stay on the ground and do wavedashes to more up smashes or they'll try to follow up in the air with a dair, fair, or sweetspotted up special.

Suggestions are to stick with oos options and maybe if you catch them in one of your little strings to just stop in the middle and then see how they react.

Just be wary because sometimes these players do something kinda crazy and unpredictable so some of this might not be viable.
