Ive been getting wrecked by captain falcons lately just due to them spamming short hop knee, i try to shield it and it doesnt seem to work, what are my best options for dealing with it?

Really? It seems like they do no DI for me until they get to high percent then just go a random direction once or twice

I want to practice doing shieks chaingrab on shiek, captain falcon, etc but im not sure how I can practice it on my own and get my opponent to DI in different ways. I have 20xx btw

I know all basic tech like wavedashing l-cancelling etc, and I'm hoping to not get destroyed at the tournament. I haven't really been able to play people that aren't CPUs other then my brother, and tips on how to do good?

100% customs should be off, they make little difference on tournament impact (See top 8 EVO) except for allowing characters with jank customs to place high. Not to mention we don't even know if Nintendo will realese dedicated patches for them, so we will have to deal with tons of infinites being...

I dont think someone having "YP" before there name is going to have any effect on the game. The few people who know what it is know what it is, but it really is nothing more then just seeing YP Bizarro Flame on the overlay. OP is blowing this way out of proportion.

If you want to find character specific AT your best bet is to go to the Falco character discussion and look for a guide on him. Off the top of my head pillaring, multishining, and laser techniques are some things you should practice for Falco.

Anther's ladder is great when you can play online, and when on your own it's probably better to play in training mode and practice things like combos and short hops rather than play CPUs. You should also look for tournaments in your area.

Simply playing with him and getting more familiar with him will help the most. If there's anything specific messing you up, it never hurts to just go into training mode and keep repeating it until your more comfortable.
