Like Sangoku said, attack where he's going to roll. I have **** loads of practice against lvl 9 CPUs and their AI is so bad they roll all the time. Once you get the hang of it you can hit them at every roll, but this is assuming he rolls EVERY time, if not you might look like an idiot sometimes...

I always liked trying to use Kirby's final cutter offensively, especially for meteor smashes. And if you can judge the height right you can use it as a projectile while jumping to an above platform which can be helpful in some situations

Personally I like Smash64 the best out of them all, and I think people disregard it is simply because it's old/has dated graphics. If it got a nice, brand new, polished feel and had online play, people may see how competitive/exciting it can actually get.
