A * indicates the moves I deem most useful.
Ganon Specific
*Ledge hop attacks
By pressing down on the control stick while holding an edge, and right after using you're double jump, you can do any of your aerials and still use the up-B to recover. U-air and F-air can be used to hit a person standing above you. The flame choke can be used to grab someone and do suicide.
*Auto-canceled aerials
The U-air, D-air, and B-air can be done in a short hop with no landing lag. You can do the N-air from a full jump to get no landing lag. Look at "instant dash attack," and "dash from landing" to find out how to capitalize on these.

*Thunder Storm
D-air is the hardest aerial to do with out lag. See the link provided to find a great tutorial video.
Thread (Video): http://smashboards.com/showthread.php?t=156761
Wizard Foot cancel
By using the down-B so that it end just past the ledge, Ganon is able to follow up with any aerial. Useful for edgeguarding quicker, and can better set you up.

Using the water to cancel the down-B is useful for when trying to spike someone underwater.

Palm Plant
This is done the same way as Thunder Storming, except you press B instead of A. The Palm plant is Ganon's fastest attack, but the end lag is costly.

*Foxtrot pivot and turn-around side-B
- At any point during a foxtrot, you can do the side-B in the other direction.
- From a dash you can do the side-B in the other direction, but the input is different. You have to do the side-B in the direction you're going, and then quickly press the control stick in the opposite direction.
You can use these to avoid an attack, and come back with the flame choke.
Input for dash turn-around side-B:
right side-B, left
Input for foxtrot pivot side-B:
Right, left side-B

*Side-B onto stage
While holding the ledge, press the jump button, and a split moment later do the side-B. Ganondorf should be doing the flame choke barely above the ground.
Thread (video): http://smashboards.com/showthread.php?t=164751
*Up-B out of shield
Everyone should have tap jump on. The up-B is faster then the thunder jab and just as long, thus allowing you to punish more different attacks after blocking then you could with the jab.

Non-Character Specific
*Dash from landing
By tapping the control stick the moment you touch the ground, you instantly start dashing. This can even eliminate the landing lag you get from a plain fast fall. By doing this after an U-air or B-air at low percents, you can easily follow up with a dash attack before the opponent lands, or even another U/B-air.
*Instant Dash Attack
This technique allows you to use the dash attack sooner then normally possible. If you tap forward and immediately down on the C-stick, you'll do your dash attack from where you were standing. This move is great for when you want to punish a whiffed attack, but you're out of range for a D-tilt. This technique is also good to do after a down-throw at low percents.
Thread: http://smashboards.com/showthread.php?t=158864
Stutter Step F-smash
By tapping the control stick in the opposite direction of where you want to attack, and then tapping the C-stick in the other direction, Ganondorf will move forward a noticeable distance before executing the F-smash.
Thread: http://smashboards.com/showthread.php?t=147549
Dash up-smash
During a dash you can do your up-smash by pressing up on the c-stick. Good to do if you dash barely under someone.
Dash shield grab
From a dash you can tap your shield and press A to do your normal grab. The regular grab is faster, but it doesn't have as much reach as the dash grab.
Pivot grab
While dashing, tap the opposite direction and the grab button at the same time. You'll get a unique grab animation. The pivot grab has more range then other grabs, and is as fast as the normal grab. The comes in handy when someone chases you.
*Perfect shield
By tapping the the shield button the same time an attack would hit you, you'll see a white flash, and you won't take any shield damage or knockback, and suffer no stun time. The jab or F-tilt make good follow ups.

Fast edgehug
Dash off the ledge, and rotate the control stick in a fireball motion towards the ledge. Ganon should appear to be running on the stage to grabbing the ledge instantaneously.
Reverse aerial rush
When you're running, tap the control stick in the opposite direction, then back to the original direction, and press jump. You should end up jumping backwards with lots of momentum. This is useful for setting up a B-air. When I plan to hit someone from a full jump, I'll use the N-air because of it's multiple hits, but if I want to short hop, a RAR B-air is better.
Edge snap cancel
If you hold down while in the air, your character won't grab the ledge. You can use this to surprise people guarding you with your up-B.
Things To Consider
There are three other techniques I know of, but I'm not sure if they're worth mentioning.
- There is Sliq's double pivot warlock punch recovery. I haven't been able to make it work better then normal DI myself.
- There's the flame choke into edgehug. I don't know if this is faster then dashing off the stage.
- Then there's the obscure turn around crouch. By holding diagonal down away from where you're facing during a down-tilt, ganon will face the other direction in a crouch when he's done. You could use this after someone rolls behind you to avoid you're d-tilt, but I prefer just doing a f-tilt in that case.
The list is getting pretty big. Is there anything I should take down? I'm considering getting rid of...
