Are high leveled Amiibos better to train with, or are people on FG the better option? I want to get better as some characters and want a way to moderately good, competitive wise.

Amiibos actually get heavier and stronger at higher levels, even if you don't feed them any equipment. Do not practice with amiibos.

Also, you cannot practice things like baiting airdodges or spotdodges, because they have perfect reaction time and will only dodge if you actually use an attack.

Maybe find a friend you could play with, online or offline.

With friends of the same skill level of you are players at your local tourney who you think are a tad-bit better than you.

All in all, being able to learn from your mistakes, defeats, etc. Make you a better player.

I'd say For Glory. There's a wide variety of players to play from, each with their own playstyle. For example, you could find an aggressive Sheik or a defensive Robin. After a couple of matches of sparring with your dedicated mains, you become more situated to adapt to similar playstyles. After all, Nairo DID state that For Glory helped him beat ZeRo in Grand Finals at that one tournament.
Not only does this work in 1v1, but it works in 2v2s as well. You can learn who makes a good team with whom, and who doesn't. You never know what character might compliment yours the best, so it's always good to try out new things.
