Couldn't pick just one, so, of the characters I play a lot:

Lucas - Down taunt. Charges a bit of psi energy on his fingertips.
Marth - Side taunt. Elaborate sheathing of sword.
Ike - Down taunt. Stabs sword in the ground and looks intimidating.
Dedede - Down taunt. The belly bongos!
Sonic - All of them! I even like the "you're too slow" one in spite of the bad voice acting on it.
