Maximizing Z-axis

There's something I noticed early on and it's that egg toss can hit certain characters even if they air dodge. I just thought it had something to do with the 2 hitboxes, but watching Esam's video and maybe it's because it also affects the z-axis.

And if so, what other moves affect the z-axis and how can we maximize this?
