There's not really one way, it's more the player trying different combos and approaches. Try to not make your intent obvious and with Sonic's speed, it's pretty easy to like run one way but then turn around and catch them off guard. Also just want to mention that I did just post a new thread...

You can't, the tournaments aren't streamed due to copyright and Nintendo.
