I think you simply just select your cloud, which should appear as greyed out when you enter elite mode. Once you select cloud, elite mode is disabled until your clouds gsp rises high enough for elite

The fact that the Monster Hunter stage was completely flat with no interesting features other than the boss definitely hints at an SSE style boss fight. The stage itself is not interesting at all, especially with Stage Hazards taken off.
