I also had a thread on Foxtrot and Pivot moves at one point ( I think that might have even be the title ), so use the search feature if you want more detail, but this post is much better organized and has vids, lol.
Basically, the building blocks of the whole thing are:
Foxtrot - Rhythmically tapping
[forward] to enter that "slide"/"grind" animation, then
[forward] again as it's ending. You can actually alter the timing between taps to throw your opponent off.

Dashdance - Hitting
[forward]-[back] or
[back]-[forward] quickly (optionally, repeatedly). You should stop it when you hit the direction you want to eventually be moving in. If you let go immediately after hitting a direction, you will perform a foxtrot in the direction you just hit.

Foxtrotting
Put together, you can do Foxtrots - When foxtrotting, you use a quick single
[forward]-[back] input (in other words, 1 "dash dance") to turn around, and from that point, you can foxtrot in the opposite direction. When you use a dashdance to 'turn' a foxtrot, we usually call it a
Dash dance pivot (DDP).
Now, we can do these in succession to do a "Foxtrot Dance", which is repeatedly linking dash dance pivots to each other.

What KID describes in your original post is doing a retreating foxtrot to bait them and make them feel "safe" to land, then immediately doing a dashdance pivot to move back in range and catch their landing with a grab or something useful.
In other words:
[Back] > (small delay) > [Back]-[Forward] > (hold forward and shieldgrab or just dashgrab)
