I was getting Doc's up air AIAs fairly consistently by dropping through the platform and jumping back onto it and since I was having an easier time getting the hitbox to come out this way I was wondering whether this would be viable out of a shield drop or whether the opponent would just block it before you got back to the platform.

Shield Drop AIA

Even if they block it, it's so fast that it's most likely safe. You might even be able to grab out of it. I'm pretty sure Mario can, especially since his upair does 2 more %. Jab grab maybe, or just shield drop back down to bait a grab and regular AI back on into a dsmash.
