My friend PerhapsMan helped me look into what Sheik's fair does when recovering. Here's what he told me:
"It doesn't affect your height at all, but it still affects your recovery in a neat way.
The first image is Sheik in the middle of her double jump animation. The second image is Sheik at the beginning of her "falling" animation, just after she did a Fair. The small blue box represents her ledge grab range.
In both examples, Sheik double jumped from the same height, and the Fair didn't affect her height at all. However, her ledge grab range is slightly longer after the Fair. You could maybe use this in situations where you wanted to get to the ledge without using your Up B. If you do use your Up B, there is no advantage to using Fair since your Up B has its own set ledge grab range."
I don't know if this is common knowledge yet, and I've heard some people say that Sheik's fair makes her double jump go higher so that might be why I see some players doing it... But I hope it helps some people understand what's going on! Again, all credit goes to PerhapsMan for figuring this out for me!
