Not to be too general, but what are the best ways to get back on the stage from the ledge? Specifically against a character that can easily cover both the ground and platforms near the ledge (ie, Marth, Peach).

For example, if I'm 100%+ and hanging on the ledge, how can I get back onstage safely? Peach can shield grab --> fthrow if I try to hop up and fair and obviously slow getup is a no no. Jumping up to the platform gets me smacked with a nair (or fair/bair). Sometimes I can jump up and carefully waveland on the stage for a grab/tilt, but most of the time I'm either getting punished on the ground from dsmash or a grab, or getting punished by her aerials if I go up. Relatively same situation with Marth.

Does it boil down to being tricky and forcing the opponent to misread which recovery option I'll attempt?

Stall until they go for the ledge, or invulnerable waveland, or jump past them and bair them as they leave shield, or no-impact land onto the stage and grab them, or charge needles and throw them at their shield then do whatever you want.

Those are the ones I use

Here are some other ideas to expand your arsenal
Side note: If they stand at the ledge ready then you might need to either Shino Stall or Ledge Drop DJ Regrab to refresh invincibility.
When you regrab the ledge there are a few frames where you are unable to do anything. Your que to let go is when Sheik is hanging straight down. You should aim to act on this frame since acting asap will maximize your invincibility frames during your next moves.

Ledge Drop DJ Nair onto stage
Ledge Drop RNC DJ Bair onto stage
Ledge Drop DJ Air Needle onto stage
On some stages (in fact all) you can utilize Wall Jumping (some better than other. Yoshi's stand out). Either into a Bair or an Air Dodge up in an angle towards the stage
Don't rely on these air dodge recoveries since punishing air dodging is relatively easy (10 frames of lag) but the invincibility from the actual air dodge is always nice :)
Another nice and safe option is the perfect wave land into a roll. Again, done so that you carry over invincibility. It's tough, but possible to learn.

you could try fast falling off the edge but quickly jumping up and throwing single needles to stall or get some hits in, which will also tempt them to shield and will distract them, giving you a chance to recover.
