I may host a weekly or so sometimes. It will always be a Sunday at 6PM EST (unless Europeans try to join, but I haven't had that problem yet and I don't think realistically I will)
Most likely using Parsec. We don't have any fancy Slippi builds or anything like that. Also, if you have parsec you won't need the game in order to join.
