If other Nintendo characters were Pokemon trainers, what Pokemon would they have?

Ice Climbers are a no-brainer - Ice-types and the few Pokemon that could pass for being Ice-type (like Seel, Suicune, and the Piplup line)

Luigi - Thunder/Fire or Thunder
Peach - Fairy or Fairy/Psychic
Wolf - Dark
Captain Falcon - Fire/Fighting
Donkey Kong - Fighting
Ganondorf - Dark
Zelda - Psychic
Olimar - Grass/Fairy or Grass

Zelda would be a psychic type trainer with Espeon, Chimecho, Gardevoir, Meloetta, Gothitelle, and Delphox.

Peach would be fairy type and I can't pick between Sylveon, Clefairy, Jiggs, Florges, Slurpuff, diancie, shiinotic, ribombee, Magearna and Comfey

Rosalina would be psychic too but would have Alakazam, Gardevoir, Cresselia, Beheeyem, Cosmog and Jirachi

Ganondorf- Cacturne, Houndoom, Crawdaunt and a few other Dark-types.
Meta Knight- A team comp revolving around Gallade
Lucina- A team comp revolving around Bisharp
Link- Very much utility-focused. Expect Tropius, Lapras, and Gogoat in there somewhere.
Zelda- I agree with MoonlitIllusion 's take, but I think she'd have a few more "royalty"-based Pokes thrown in as well. Specifically Meowstic and/or Vanilla-Persian

As for third-parties who have been in Smash...
Sonic- Ninjask, Accelgor, Electrode, Aerodactyl, Crobat, Talonflame
Cloud- A couple Pseudo-legendaries, plus Gardevoir because "lol aeris/aerith"
