Do you know a good character that can help me practice reads? Is Doc. a good character to practice reads?

I'm not sure, I haven't use Doc for a long time.

I really heard that Dr. Mario can be a good character to practice reads along with Ganondorf, since they really so much on reads to perform successfully.

Really? Isn't Doc just a semi clone of Mario?

They're really clones, but Doc has different attack properties and two different attacks and has the most differences between the two other clones (which are Dark Pit and Lucina). You can say they're close to semi-clones but they still feel pretty similar, not like Marth-Roy.
