Why should Final Fantasy be represented in Smash?
Final Fantasy, developed by Japanese game developers Square Enix, is one of the most popular and critically acclaimed gaming franchises of all time. It has sold over 110 million units worldwide, and is by far the most well known RPG serieses of video game history.
Not only that, but it has very strong ties with Nintendo - most of the series' early instalments were on Nintendo consoles. The first game was released in 1987, specifically for the NES.
The Final Fantasy games are iconic and beloved, and are - without a doubt - of the same 'all-star' quality as Sonic the Hedgehog, Street Fighter, Mega Man, and Pac-man.​

Why Moogle & Chocobo and not another Final Fantasy character?
Both Chocobos and Moogles are heavily recurring species throughout the Final Fantasy series. At this point, they are the mascots of the series, due to their popularity and important role throughout the games.
While Black Mage is popular too (and would also be a neat character), when it comes to pure iconic status, Moogle and Chocobo take the cake. Cloud Strife, while undoubtedly the most well-known and popular of the Final Fantasy characters, has never been an established character on Nintendo consoles (save for maybe one game), so that detracts from his chances of becoming playable.
Overall, Chocobo & Moogle are the perfect Final Fantasy characters for Super Smash Bros. They are among the few characters who are recurring throughout the entire Final Fantasy series as a whole. It makes sense that they would fight as a team: Moogles have indeed ridden Chocobos in numerous Final Fantasy games - a class known as the 'Chocobo Knight' has characters such as Moogles using a Chocobo as a steed.
Ultimately, Chocobo & Moogle are the most well-known characters in the Final Fantasy franchise: they have had lots of merchandise, and continue to play prominent roles in each new instalment. They have a very marketable appearance, which fits in well with the rest of the Smash cast. By all means, they are all-star characters. Moogle has even appeared in a couple of Mario games - he has been in both Mario Hoops 3-on-3 and Mario Sports Mix. Evidently, Square Enix is willing to allow the use of these characters in Nintendo games, so surely they'd be a welcomed addition to Smash!​
For these reasons, Moogle & Chocobo are the best representatives of the Final Fantasy series for a Nintendo crossover.

Stats:
Weight: 107 (around the same as Wario)
Walk Speed: 1.15 (around the same as Yoshi)
Run Speed: 2.05 (between that of Sheik and Greninja)
Jump Height: 2.84 (around the same as Zero Suit Samus)
Air Speed: 1.20 (around the same as Zero Suit Samus)
Fall Speed: 1.30 (around the same as Yoshi)
They are quite tall - Chocobo is around the height of Donkey Kong, while Moogle measures about Pikachu's size. Moogle rides on Chocobo's back during the fight.


Neutral Special: Spell Cast
Moogle stands up on Chocobo's back and casts a spell. The spell he uses is determined by how long the B button is held:
If the button is tapped, Moogle will cast Firaga, which is a quick, PK fire-esque projectile that is shot towards the ground, leaving a small flame where it hits. The initial blast deals 6%, and touching the flame deals 2% per second. The flame stays around for about 6 seconds.
If the button is held for 2 seconds, Moogle will cast Thundaga, which causes a lightning bolt to strike the ground about one battlefield-platform's distance away from Chocobo. This deals 10% damage, and stuns the opponent for a few seconds.
If the button is held for 4 seconds, Moogle will cast Blizzaga, which causes shards of ice to rain down two battlefield-platforms ahead. If the ice hits an opponent, it will cause a freezing effect (similar to PK Freeze).
Origin: Firaga, Thundaga, and Blizzaga are all common spells used throughout the Final Fantasy series.

Side Special: Chocobo Kick
Chocobo dashes forward at the speed of Sonic's dash, with Moogle clinging on for dear life.
Then, Chocobo jumps into the air, feet first, delivering a strong kick to the opponent. The kick deals 12% and has notably high knockback (it can kill from 100-90%).
Origin: Chocobo kick is arguably the most iconic ability of the Chocobo. First appearing in Final Fantasy 3, it is typically the move that Chocobo uses when summoned.

Up Special: Escape
Chocobo and Moogle become surrounded by a glowing, white ring of light.
After two seconds pass, they will disappear in a burst of bright light. Where they reappear can be controlled in a similar manner to Farore's Wind.
Origin: Escape is a common action throughout the Final Fantasy series. Usually, it lets the party flee a battle. In the Chocobo Dungeon games, it allows Chocobo to warp to a different location within the dungeon.

Down Special: Dig
Chocobo pecks at the ground (a small attack hitbox that deals 4%), and then begins to dig. Digging takes about 3 seconds, and allows Chocobo to procure an item to use.
60% of the time, the item will simply be a rock. By pressing A, Chocobo can kick the rock forward, which deals damage to any opponent it hits. Like Peach's turnips, the opponent receives more damage if they are hit at a closer range - they receive 12% at it's closest, while only 5% from a farther distance.
20% of the time, the item will be an empty bottle. Again, by pressing A, Chocobo will kick it. The empty bottle shatters upon contact, dealing damage and stunning opponents temporarily. This deals 15% when it is kicked close-ranged, and 8% from a distance.
10% of the time, Chocobo will dig up a Gysahl Green. Chocobo eats this up right away, healing 5%.
The final 10% of the time, Chocobo will dig up an item such as a Bob-omb or Mr. Saturn. Chocobo will pick it up with his beak and pass it to Moogle, who can then throw it.
Origin: A common use for Chocobos throughout the Final Fantasy series is their ability to dig for buried treasure. The rocks and bottles specifically originate from the Chocobo Dungeon games, while Gysahl Greens are common throughout the series as a Chocobo's most favourite snack.

Final Smash: Choco Meteor
Moogle performs a summoning dance upon Chocobo's back. Suddenly, a massive Fat Chocobo comes crashing onto the battlefield! This behaves like a stronger version of the Snorlax pokeball summon.
Anyone squashed under Fat Chocobo will almost surely be KO'd. This move needs to be aimed correctly, because the Fat Chocobo is only large enough to cover an area about half the size of Final Destination.
Origin: The Fat Chocobo, which first appeared in Final Fantasy 3, appears as a summon throughout the series.


A: Chocobo kicks once. 3%
AA: Chocobo kicks once, then a second time. 3%, 3%
AAA: Chocobo kicks once, then a second time. Moogle finishes by whipping his pom-pom forward. 3%, 3%, 4%

F-tilt: Chocobo swipes forward with it's left wing. 9%
U-tilt: Moogle stands up on Chocobo's back and does a small uppercut. 8%
D-tilt: Chocobo sharply pecks the ground. Quick and spammable. 4%
Dash: Chocobo leaps in the air, headfirst, delivering a powerful peck. 7%

F-smash: Chocobo rears its head back, and then thrusts forward with a flaming beak attack. 12%
U-smash: Moogle smacks upward with a staff (from the mage class). When it connects, there is a magical sparkle effect. 16%
D-smash: Chocobo hops into the air slightly and then slams down on its rear, causing the ground below to quake. 15%

N-air: Chocobo and Moogle twirl around in the air. 6%
F-air: Chocobo pecks forward. 8%
B-air: Chocobo kicks backward with both feet. 9%
U-air: Moogle does a backflip. 7%
D-air: Chocobo does a diving kick downward (similar to Sonic's D-air). 10%

Grab: Chocobo grabs the opponent with its beak.
Pummel: Moogle repeatedly smacks the opponent with its pom pom. 2%
F-throw: Chocobo kicks the opponent forward. 9%
B-throw: Chocobo swings the opponent backward with its beak. 8%
U-throw: Moogle grabs the opponent with both hands and flies them upward, and then drops them on the ground. 9%
D-throw: Chocobo scrapes at the ground with its feet, and then buries the opponent (like Lucas's D-throw). 7%

Side Taunt: Moogle says "Kupo?" to which Chocobo smiles and nods with an assuring "Kweh!".
Up Taunt: Moogle flaps it's wings, hovering the the air, as Chocobo ruffles it's feathers.
Down Taunt: Chocobo whistles a short song as Moogle dances on his back.

It's funny, these duo characters seem to be some of the most fun and unique.

Unfortunately you are probably correct.
For some reason there doesn't seem to be much fan demand for a FF character.
my guess would be cause you dont see the series on nintendo consoles anymore (apart from virtual console)
