I'd say you go read some guide too but I'll write a little something here anyway.
It depends on who you're playing really. If you're better than your opponent, you should go all out, don't give him time to think! Just charge at him all the time to keep him pressured and nervous.
When playing against a person of equal skill, you should use more skills and setups. Trick him a little, make more tactical attacks and pill a lot.
When playing against someone who's clearly better than yourself, you need to play cheap as ****. Pill like a maniac to keep him at bay and when he gets close, smash, throw or use a tilt. Just make him go away and then pill him. Make him frustrated so he plays worse than usual, and he's hopefully screwed.

Pill spam and use his downsmash when you need to get them away, and his fsmash is a INSANELY powerful KO move. Use his WD to move around, since he has a great one. Um...his back throw is really powerful...that's all I can think of right now.

Definitely read the Doc guide. . .but I'll add my many cents anyways.
If you happen to be on Final Destination or some other large, flat stage, pill like a madman. There's so many pill setups that Doc can use, esp. in approaching the opponent.
Pill Rush is great--dash, short hop, pill, fast fall. This is usually followed up w/ aerials, b/c your opponent will be forced to jump in order to avoid the pill.
Or you can do a High Pill Rush--dash, full jump, pill, fast fall, to keep the opponent grounded. Follow this up w/ a shffl'd attack, usually his AFA.
Or you can do the standard pill spam--full jump, pill, double jump, pill, fast fall. This is great for just annoying your opponent, since it's pretty hard to bull through pill spamming w/o getting hit.
btw, whenever you pill, you should do a rising pill, i.e. jump, but immediately after you jump, press B right after you leave the ground; this will get the attack started earlier, so you end w/ less lag.
Wavedash all over the place. Doc's wavedash is pretty good.
As far as Doc's tilts go, they suck. They're too situational. F-tilt is fine for long range poking; it's actually not that bad (i.e. wavedash back+f-tilt to stop shffl'd attacks). His d-tilt can be used to knock foes off the stage if they're attack you while you're back is to the edge. His u-tilt is only used for limited comboing, i.e. after a d-throw or shffl'd ADA.
Abuse his d-smash, and ignore the u-smash and f-smash. U-smash has 0 knockback, and his f-smash range is less than or equal to his grab range. If you really want to use his f-smash, use it after his ADA or d-throw, or try wavesmashing forward or back for extra range--but you're better off wavesmashing w/ his d-smash, as it has better range and it's faster.
Abuse his AFA and ABA. His AFA should be aimed behind the opponent to avoid being shield-grabbed, and should only be shffl'd, as using it in the air has lag problems. Doc's AFA is nothing less than packaged death in shffl'd form.
His ABA is incredible as an offensive tool b/c of its speed, and using ledge-hopped ABAs is excellent for edgeguarding.
Remember that Doc is primarily an aggressive/offensive character, his entire moveset is based around that fact. If you want to play defensively (as you want to vs. top tier chars) focus on pills to form a defensive screen, and conservative use of his AFA.
So. . .use pill spam, d-smash/wavesmash, wavedash for movement, f-tilt for poking, and abuse his AFA/ABA.
